Colombia Supremo
Supremo are large beans, screen 17 and 18, that represent Colombia's highest grade. This particular lot is from the famed Medellin region. The best Supremos, including these, are grown at altitudes between 4500 and 6000 feet, generally in the Central Cordillera mountain range. You will see Supremos deriving from Medellin, Antioquia, Manizales, Tolima, Valle de Cauca, Popayan and Narino, with occasional coffees from the Eastern Cordillera. There are two harvests a year in this region depending on location, one in March - May and the other smaller harvest October - December.
Mostly traditional wet method processing takes place, some with fermentation and more and more today with aqua-pulping, a method for removing pulp with less need for copious water and coffee by-products.
Cupping notes: Bright, sweet, smooth with light acidity which combine
for clean cup. A reliable cup as single origin, and, an excellent blend component to add bright notes with subtle body.
