Producer Guillermo Adolfo Fallas Mata grows his prized Catuai high up in the mountains of Tarrazu, between 1750 and 1850 meters. Several years ago he decided to purchase his own Micro milling machine, also known as a demucilage machine, motivated to have complete control over the outcome of the coffee he grows. He also provides milling on behalf of some coffee producing neighbors.

While we await the arrival of new crop coffees from Costa Rica that will begin to arrive in the coming months and possibly with tariffs, this current crop coffee is a first time offering for us, and still cupping very well. A very elegant high grown coffee, noticeably sweet and further enhanced by skillful honey processing.
